The Best Grilled Chicken within 30 minutes!

 

You just got home and you have to cook dinner. Your tired, hungry and all you want to do is relax.  Plus, you know a sandwich is not going to cut it. Nikki's Marinade to the rescue! I'll be doing a series of 30 min meals using my products to help you with your cooking dilemmas. I'll be showing you how to make simple, delicious meals that the whole family will love. THE BEST GRILLED CHICKEN WITH GARLIC MASH POTATOES AND BROCCOLI EVER!

  • 1 lb of chicken or 6 pieces of chicken thighs

  • 3 tbs of Original Spicy 

  • 1 tbs of Apple cider vinegar 

  • 1/2 tbs of Dijon mustard

  • Salt to taste

  • 3 large potatoes 

  • 3 large head of broccoli 

  • 1/4 cup of olive oil

  • 2 sticks of butter

  • 1 can of carnation milk

  • 4 cloves of garlic diced

  • Scallions as garnish

  • One small onion sliced

  • 1/2 tbs Tomato paste

  

Meat Prep: 

Combine the chicken, marinade, apple cider vinegar, and dijon mustard together and insert them in a zip lock bag. Refrigerate for 30 mins 

  

Vegetables: 

(Potatoes) 

Boil the potatoes in a pot until tender. (Add salt to taste) Once soft, drain the water from potatoes and allow the potatoes to get warm. Once warm, peel the skin off the potatoes and transfer them into a bowl. Mash the milk and 1 stick of melted butter together with the potatoes. 

  

(Broccoli) 

Boil water in a pot. Once the water is bubbling remove the pot from the burner and add broccoli. (Salt to taste) Allow the broccoli to sit in the pot for 3-4 mins. Then drain. Mix 1/2 stick of melted butter with garlic with the broccoli. 

  

Meat: 

Remove the chicken from the bag and place it on a plate. Drizzle olive oil and place on the grill. Cook each side for 6-7 mins or until 160 to 165 f (internal meat temperature).  While on the grill base the meat with the juices from the marinade until done. 

  

Sauce: 

Combine 1/2 stick of butter, water, 1/2 tbs of Original Spicy, and tomato paste in a pan and let it simmer. Once you see the bubbles add the onions and remove from the burner. Let it sit for 2 minutes. 

  

Plate everything together and enjoy!!
